- Aged four to six months, this cheese, like some wines, improves with time, holding a delicate, fragrant and floral aroma and an ivory paste that tends to pinstripe. Again, like La Granda, great as an aperitif, or paired with red wine, and a good melter–try it in a risotto made with Cascina Oschiena’s Arborio rice.
- This is classical goat’s cheese with a soft tender dough. It comes from the Casinca region of Corsica where the climate is gentle. When the cheese is ripened the taste becomes nutty.

A beautifully rustic goat cheese from an epicenter of traditional mountain cheesemaking: Lombardia. An earthy aroma on the rind yields to a paste that is sweet, tangy and delicate, with a clean finish. The natural rind is straw colored with a slight bloom of microflora, and the ivory paste is dense, smooth and supple, with some eye formation. The producer specializes in goat’s milk cheeses and ages them in historic natural caves from the 9th Century.
